Do you also struggle often with eating healthy when you have a busy schedule? Me too. I gained quite some weight since I do my current job. Being in a rush often makes me pick unhealthy and fast solutions. And I noticed that, when I don’t take my own lunch to work, I give so d*mn easy into the cravings of my colleagues like pizza, durum or something else with quite enough calories. Who wouldn’t, these things are so tasty!
But right before the Summer started, I desperately wanted to make a change; back to healthy and fit. I was feeling tired and looked like I definitely could use some extra vitamines before the bikini season started.
With the help of Pinterest, I have found 3 easy lunches to take with me to work. And they are so tasty!
The blueberry rucola salad
This one is the easiest of them all. It only takes max 3 minutes to make it.
So what do you need :
- feta cheese (chopped in pieces)
Throw all these ingredients together and you’re done. As I’m always in a rush in the morning, this is my go-to recipe. You only need to chop the feta in pieces, so it’s easy and fast. And at the same time, the taste is amazing; fresh and sweet. Definitely worth trying 😉
The watermelon salad
I love watermelon! As I was searching some inspiration for healthy low calorie lunches, I found this recipe with feta and watermelon. It maybe sounds a bit of a strange combination in the beginning, but it’s awesome!
You just need:
- watermelon (chopped in blocks)
- feta (cut in pieces)
- mint leaves
Ok, this one takes around 8 min to prepare, cause you need to cut the watermelon and feta pieces. But it’s still very easy. And super tasty with some lemon and mint water.
By the way, the things you need are similar as the ingredients of the first recipe. That makes the shopping list a bit shorter. 😉
Lentil and avocado salad
This one takes about 15 min to make as you have more different ingredients. You need:
- a can of lentils
- pomegranate (I buy the piece of fruit but also a lot of stores sell just the seeds)
- one avocado
- fresh parsley
- one orange
Also here it’s just slicing everything in pieces and putting everything in a bowl. One tip; squeeze a bit of the orange juice over the mix.
